Not sure if this would've been better here or in programming....
Anyway, how would I make a blackjack system in an RPG maker game?

Chess would be very hard for a beginnner to do. You could get all the movement and everything down pretty easily, but making the AI is a whole other thing.

I would recommend blackjack or Texas Hold'em.

Ugh, I hate hold 'em. Ummmm....
Sure, black jack. That and dice, I'm working on a casino. Already have slots and such.
