I apologise if this has been asked before. I did a quick search on the forums and could only find something that partly answered my question.
My question is this:
Would it be legal for me to sell a game made using RM2k3 if I used the default sprites and tilesets, or would I have to use all custom ones that I've made myself?

It's a tough call. I'd generally not advise that, though, because RPGMaker, especially 2000 and 2003, are kinda illegally translated and stuff.
At least for RPGMaker VX, you can sell games (http://www.rpgmakervx.net/index.php?showtopic=30380&hl=sell), even with the RTP, but that's for something that people normally paid 100 dollars for to get in the first place. To do the same for something that would normally cost a similar sum, but one got for free... It doesn't seem like something legal to me.

I remember there being a part of the license agreement of the install being "I will not make profit of games made with EBenterbrain's RPG maker 2003" blablabla.'
Might be wrong though.

No it wouldnt.
Not unless you are using the liscensed Japanese version.
Not to mention, nobody but your grandmother is going to buy a RPGM game. Perhaps a dumb auntie would buy an XP game.
