Calling all Linux users

Hey guys. Assuming I've attracted people who know about Linux and it's plethora of distributions...

I currently have Parallels Desktop on my Mac. This means I can run different operating systems as a seperate process within my Mac. Right now, I have it set up so that I can switch over to windows (running on a seperate desktop) with a key combination, and back to Mac with a key combination. Namely, command+right arrow key, and command+left arrow key.

As it turns out, the program I use to do the desktop-switching won't let me have less than three desktops. So, there's a third desktop lying around unused. More importantly, it's confusing, because there's nothing to distinguish it from my other Mac desktop, in which I have all my applications running.

So, I was thinking, to fill the void, I could have a third operating system running on that third desktop. Linux.

Now, you may ask, "why?"

And I'll say: "Why not?" Because, come on. What's not cool about having three operating systems running on your computer at once. And being able to switch between them instantly.

TL;DR: What version of Linux should I get?

The supported versions are:

Edit: SUSE Linux Enterprise Server 10 SP2, 9 SP3, sounds the most eccentric.

I chose Ubuntu. I currently have it, and Windows Server 2003 running on my mac.

Good. Ubuntu is great for easing into Linux. I'm sure once you've played around with it a bit, you can consider replacing your main operating system with it.
