A backronym or bacronym is a type of acronym that is constructed to match the letters of an actual word appropriate in some fashion to the topic at hand.

In short, acronyms is where you have a phrase like Jesus Fried Salmon and shorten it down to "JFS" where as a backronym, as this game demonstrates, is where you take a word (or a previously existing acronym in which case you'd be changing the meaning of some/all of the letters) seperate it into its letters and then find words for those letters.
